I selected a mini muffin pan to make smaller treats but you can use a normal muffin pan if you wish.
Chocolate topped Oat & Peanut Butter Bites

Ingredients
1 cup oats
¼ cup protein powder –
3/4 cup peanut butter
⅓ cup honey
Topping
½ cup chocolate chips
2 tbsp full fat coconut milk or coconut oil – I didn’t have either of these so just used some olive oil which doesn’t sound good but made no difference to the taste.

- Combine oats, protein powder, peanut butter and honey and press into a muffin pan (or mini muffin pan as I used). Just fill about 2/3 full leaving room to pour chocolate over the top.
- Topping – melt chocolate chips and oil/milk in the microwave together for 40 seconds and then pour over the bites.
Refrigerate for 30 minutes until chocolate sets and then enjoy!
Warning: They taste delicious and it is definitely difficult to stop at one!
Let me know if you try them.
