Chocolate topped Oat & Peanut Butter Bites

I selected a mini muffin pan to make smaller treats but you can use a normal muffin pan if you wish.

Chocolate topped Oat & Peanut Butter Bites

Ingredients

1 cup oats
¼ cup protein powder –
3/4 cup peanut butter
⅓ cup honey

Topping
½ cup chocolate chips
2 tbsp full fat coconut milk or coconut oil – I didn’t have either of these so just used some olive oil which doesn’t sound good but made no difference to the taste.

  1. Combine oats, protein powder, peanut butter and honey and press into a muffin pan (or mini muffin pan as I used). Just fill about 2/3 full leaving room to pour chocolate over the top.
  2. Topping melt chocolate chips and oil/milk in the microwave together for 40 seconds and then pour over the bites.

Refrigerate for 30 minutes until chocolate sets and then enjoy!

Warning: They taste delicious and it is definitely difficult to stop at one!
